Ingredients

- 1/4 cup olive oil - 1 lb smoked sausage chopped  into 1" discs - 8 oz ham steak  - 1 10-oz bag frozen seasoning blend - 1 14.5-oz chicken broth -2 15.5-oz can black-eyed peas

- 1 10-oz can Rotel tomatoes, undrained - 1/2 tsp Cajun seasoning - 1 tsp garlic powder - 1 tsp dried basil - 1/2 tsp salt - 1/2 tsp black pepper

- 2 cups uncooked long grain rice - green onion, for garnish

Equipment

- Large (5-quart) pot with cover - measuring cups - measuring spoons

Step 1

- Brown the sliced sausage in olive oil over medium heat. - Use a large (at least 5-quart), heavy pan

Step 2

- Remove the sausage from the pan and add the diced ham. - Brown for 5 minutes over medium heat.

Step 3

- Add the frozen vegetable mixture to the pot with the ham.  - Simmer uncovered for 5 minutes. - Use a spoon to scrape the bits that may have adhered to the bottom of the pan.

Step 4

- Return sausage to pot. - Add chicken broth, peas, Rotel tomatoes, and seasoning. - Mix well then add rice and mix again. - Taste test and add more as desired.

Step 5

- Bring mixture to a boil. - Lower heat to medium-low and put lid on pot. - Simmer for 10 minutes, remove lid, stir, replace lid.

Step 5

- Turn head down to low and slow simmer and additional 20 - 25 minutes. - Remove from heat and let rest, covered, for 5 minutes.
