Ingredients

-Russett potatoes, skin on -Olive oil -Rosemary -Thyme -Salt -Pepper

Ingredients

-Cheddar cheese -Bacon -Sour cream -Pico de gallo -Cilantro -Green onions

Equipment

-Baking sheet -Mandolin or sharp knife -Measuring cups -Measuring spoons -Cast iron skillet

Step 1

-Preheat oven to 450F -Spray baking sheet with nonstick spray

Step 2

-Toss sliced potatoes into bowl or ziptop bag with oil, thyme, salt, pepper, and rosemary

Step 3

-Place potatoes in a single layer on prepared baking sheet for 2o min -Flip and bake an additional 20 mins

Step 4

-Place the roasted potatoes in cast iron skillet in a round, overlapping pattern

Step 5

-Add bacon and cheese on top and cook 3-4 mins until cheese melts -Garnish with sour cream, pico de gallo,  onion, and cilantro

Notes

-Wash and dry the potatoes if they are dirty

-For a stronger cheese flavor, use extra sharp beer cheese
