Ingredients

-Chicken legs and thighs -Baby new potatoes -Red onions -Chili garlic sauce -Cilantro -Chili powder -Minced garlic -Ground cumin -Salt and pepper

Equipment

-Rimmed baking sheet -Gallon ziplock bags -Measuring cups -Measuring spoons

Step 1

-Mix ingredients except chicken, potatoes, and onion

Step 1 (continued)

-Place chicken in ziplock bag -Add marinade to bag -Marinate for 6+ hours

Step 2

-Place chicken on baking sheet -Place onions and potatoes around chicken -Sprinkle with pepper

Step 3

-Place into 425 F oven for 20 mins -After 20 mins stir potatoes and return to oven

Step 3 (continued)

-Bake an additional 20 mins or until chicken is no longer pink -Garnish with fresh cilantro

Notes

-Use rimmed baking sheet to prevent juices from overflowing into oven.

-For extra spice, use more chili garlic sauce.
