-Prep Time: 10 mins -Cook Time: 20 mins -Servings: 6 -Calories: 393 kcal

Ingredients

-Ground beef -Salsa -Red enchilada sauce -Dried cilantro -Chili powder -Smoked paprika -Cumin

Ingredients

-Salt -Black pepper -White corn tortillas -Shredded cheddar cheese

Equipment

-Large saute pan -Casserole dish -Measuring cups -Measuring spoons

Step 1

-In saute pan, cook and break up ground beef until no longer pink - no big chunks -Drain off the fat

Step 2

-Slice the tortillas into 3 strips each -Tip:  stack tortillas and use a pizza cutter

Step 3

-Add salsa, enchilada sauce, water, spices and seasonings -Stir well -Taste test  -Simmer 5 mins

Step 4

-Spray 1.5 quart round casserole dish with non-stick spray -Add half the slice tortillas, half meat sauce, and cheese

-Repeat layer of tortilla strips, meat sauce, and cheese

Step 5

-Bake uncovered for 15 mins

Notes

-Use restaurant style chunky salsa -Serve with traditional sides like sour cream, guacamole, slice jalapenos, or diced tomatoes
