Easy Southern Shrimp and Rice Casserole

Delicious cajun shrimp cooked with butter, onion, bell pepper, and celery.  

Ingredients

- 2 1/2 cups cooked rice - 1 10 oz bag seasoning blend (chopped onion, bell pepper, and celery) - 1/2 cup butter - 1 lb peeled raw shrimp

Ingredients

-1 tsp minced garlic -1 tsp Cajun seasoning - 1/2 tsp black pepper - 1 10.5 oz cream of mushroom -1 10.5 oz cream of cheddar soup

Equipment

- 2 quart pot with cover for cooking rice - 5 quart pot for covering shrimp and ingredients - measuring cups - measuring spoons

Step 1

- Cook rice according to directions in 2 quart pot

Step 2

- Preheat oven to 350 F - In 5 quart pot, saute onion, bell pepper, celery mixture with butter for 5 minutes

Step 3

- Add shrimp, garlic, Cajun seasoning, and black pepper - Simmer for about 5 more minutes

Step 4

- Add the soups and cooked rice - Mix well - Taste test and add additional seasoning as desired

Step 5

- Pour into casserole dish - Baked covered at 350F for 30 minutes
