Baked Egg In Avocado With Bacon And Cheese

Ripe avocado halves filled with an egg, baked to perfection and topped with bacon & cheese.   A healthy, easy breakfast or quick dinner recipe with only 2 net carbs per avocado half.

- Ripe avocados - Small eggs - Shredded cheese - Strips bacon - Salt & pepper

Cut avocadoes in half and remove the seeds.  Carefully remove some of the avocado flesh to make room for the egg.

Use small or medium size eggs since large eggs tend to overflow. Place the avocado halves in a muffin tin to help keep them from moving around.

Crack an egg into each avocado half.  Sprinkle a little salt & pepper to each avocado, if desired.

Bake for about 20 minutes at 350F. Remove from oven and top with cheese and bacon.
