Cast Iron Pork Tenderloin

Coat the pork tenderloin with ½ tablespoon of oil then sprinkle with salt and pepper.

Add 1 tablespoon of oil to a large cast iron skillet. Over high heat, sear all sides of the tenderloin.  Put skillet in hot oven and bake until 145F. Remove and cover with foil.

Prepare the blackberry BBQ sauce in a small pot. Heat for 5 minutes

Cut the pork tenderloin medallions and serve with warm blackberry BBQ sauce.
