Pork Stir-Fry with Cashews

This speedy and effortless weeknight dinner can be ready in less than half an hour. It features thinly sliced pork, which is stir-fried along with Bok choy, bell pepper, onion, cashews, and traditional Asian seasonings, resulting in a flavorful Pork Stir Fry.

KEY INGREDIENTS

– pork, thinly sliced – red bell pepper, green onion – minced ginger or ginger paste – cashew nuts – Bok choy – toasted sesame oil – soy sauce or tamari – toasted sesame seeds – olive oil (or peanut oil)

Heat the olive oil in a wok or a large frying pan. Add the pork and cook, until the pork is nicely browned on all sides.

Add bell pepper, green onion, ginger, cashew nuts, and garlic powder. Stir fry the veggies until they become crisp-tender.

Add the Bok choy, sesame oil, and tamari. Continue to stir fry until the Bok choy wilts.

Garnish with toasted sesame seeds.  Serve as-is or with rice, fried rice, cauliflower rice, or noodles.

Swap out the pork with sliced chicken or whole shrimp. Spice it up by adding red pepper flakes, chili paste, or sriracha hot chili sauce! Swap out the veggies by adding broccoli florets, snow peas, zucchini, or carrots.
