- Extra virgin olive oil - Yellow onion - Celery stalk - Carrot - Sea salt & black pepper - Garlic - Chicken or vegetable stock - Tomatoes - Bay leaf
Set your Instant Pot to Sauté and add olive oil. Once hot, add onion, celery, carrots, salt, and pepper. Cook, stirring occasionally, until the vegetables are softened, approximately 4-5 minutes.
Add the garlic and sauté for 1 minute. Add the stock and gently scrape up any brown bits off the bottom of the pot. Continue cooking for 2-3 minutes before turning the pot off.
Add tomatoes, bay leaf, thyme, and rosemary, and stir. Put the lid on and lock into place. Position the vent to Sealing and set the Manual setting to 4 minutes.
