Jalapeno Cheddar Cornbread (no Jiffy!)

This made-from-scratch Jalapeno Cheddar Cornbread is superior to Jiffy cornbread mix.  I assure you this cornbread is better than anything that comes in a box.  Ready in under 1 hour!

INGREDIENTS

- Self-rising cornmeal mix - Creamed corn - Cheddar cheese - Jalapeno peppers - Sour cream - Oil and Eggs

How to Make It

1. Mix cornbread batter.

2. Pour half the batter into cast iron skillet.

3. Top with cheese. Repeat layers.  (or you can skip the layers, mix everything up, and bake!).  Delicious both ways!!

4. Bake as directed.  Enjoy!

Jalapeno Cheddar Cornbread is an easy side dish that goes great with just about anything.  Try it with a bowl of chili or with some grilled chicken.
