Oven Roasted Parmesan Potatoes

- Russet potatoes - Parmesan cheese - Butter - Olive oil - Herbs de Provence (or Italian seasoning mix) - Salt and pepper

Thinly slice the potatoes.  A mandolin works great for this step.


Place the potatoes in a small cast iron skillet.


Drizzle melted butter and the seasonings on top of the potato slices.


Sprinkle the Parmesan cheese on top.



Cover the skillet and bake as directed.
