Instructions
Add the coconut flour, baking powder, and cocoa powder to a small bowl and stir to combine.
In a separate bowl, add melted butter. Add sweetener and stir until completely dissolved. Taste the sweetness level and add more sweetener, if desired. Add the remaining ingredients to the butter mixture and use a whisk to combine.
Add wet ingredients to the dry ingredients and stir until completely blended. Pour the mixture into a mug, large coffee cup, or small microwave-safe container. I recommend a 12-oz container to allow for the batter to rise without spilling over while cooking.
Cook on high for 45 seconds then check for doneness. If not yet done, cook for another 10 seconds. If still not yet done, cook for another 5-10 seconds. Cook times will vary depending on your microwave wattage. Overcooking the batter will cause the cake to be very dry and tough.
Remove the container from microwave (be careful, it'll be hot!) and serve immediately with a fresh sliced strawberry, if desired.
