Fluffy texture - Because this recipe is made with coconut flour, it has a wonderful cake-like texture. Unlike almond flour, which can have a grainy "cornbread" texture.
If you are out of coconut flour or can't find any at the grocery store, here's my list of great ways you can substitute for coconut flour.
Simple ingredients - This easy keto dessert contains 9 ingredients, which you probably already have most on hand. The recipe uses granulated monk fruit sweetener (Lakanto is my favorite). To me, it's the closest thing to sugar I've found! Plus, it tastes great with chocolate...nice and sweet, not bitter.
Easy keto sweetener swap out - Use your favorite keto sweetener! Instead of monk fruit, use Swerve. What is Swerve? Swerve is a natural sweetener; the main ingredient is erythritol. Both measure cup for cup just like sugar, so it's very convenient as there are no conversions to figure out before baking.

Coconut flour - for a fluffy, cake-like treat!
Unsweetened cocoa powder - for that rich, chocolate flavor.
Unsalted butter - use salted butter if that's all you have.
Sweetener of choice - My favorite is granulated monk fruit (such as Lakanto) because it tastes great! My other choice is Swerve because it tastes pretty great, too.
Egg - to bind the batter and also fluff up the mug cake.
Heavy whipping cream - because of its high-fat content, it adds tenderness and moisture.
Pure vanilla extract - adds a nice flavor to the mug cake. You could also use maple flavor extract.
Salt - if you use salted butter, you can leave out the salt.
Optional:
After cooking the mug cake, top with a fresh sliced strawberry (adds 1 net carb).

Not for this recipe! Coconut flour and almond flour are completely different! The closest substitute would be soy flour, and you would use 3 tablespoons of it instead of coconut flour.
Just place it back in the microwave and cook for about 15 seconds (or just until warm).
Most likely, it was overcooked. For the best results, cook a mug cake in increments. Start out by cooking this mug cake for 45 seconds, then check on it. If not yet done, cook for another 10 seconds. Add another 5 seconds after that, if needed.

- 1-½ tablespoons coconut flour
- ½ teaspoon baking powder
- 1-¾ teaspoons unsweetened cocoa powder
- 2 tablespoons unsalted butter, melted
- 1-½ tablespoons granular Monk fruit sweetener such as Lakanto Classic Monk Fruit Sweetener (or use your favorite)
- 1 egg
- 2 tablespoons heavy cream
- ¼ teaspoon pure vanilla extract
- ¼ teaspoon salt
Instructions
- Add the coconut flour, baking powder, and cocoa powder to a small bowl and stir to combine.
- In a separate bowl, add melted butter. Add sweetener and stir until completely dissolved. Taste the sweetness level and add more sweetener, if desired. Add the remaining ingredients to the butter mixture and use a whisk to combine.
- Add wet ingredients to the dry ingredients and stir until completely blended. Pour the mixture into a mug, large coffee cup, or small microwave-safe container. I recommend a 12-oz container to allow for the batter to rise without spilling over while cooking.
- Cook on high for 45 seconds then check for doneness. If not yet done, cook for another 10 seconds. If still not yet done, cook for another 5-10 seconds. Cook times will vary depending on your microwave wattage. Overcooking the batter will cause the cake to be very dry and tough.
- Remove the container from microwave (be careful, it'll be hot!) and serve immediately with a fresh sliced strawberry, if desired.
