We love sweets at our house! So why not have a sweet treat that’s low carb and keto friendly like this one!
I love this quick and easy low carb dessert. It’s the perfect single-serving dessert when your sweet tooth needs something sweet and chocolatey NOW.
Because this recipe uses coconut flour, it has a wonderful cake-like texture. Unlike almond flour, which can have a grainy “cornbread” texture.
This easy keto dessert contains 9 ingredients, which you probably already have most on hand. The recipe uses Swerve sweetener. What is Swerve? Swerve is a natural sweetener; the main ingredient is erythritol.
According to the Swerve website, “Swerve is a delicious natural sweetener that measures cup-for-cup just like sugar! Swerve is made from ingredients found in select fruits and starchy root vegetables, and contains no artificial ingredients, preservatives or flavors. It’s zero-calorie, non-glycemic and safe for those living with diabetes, since it has no effect on blood glucose or insulin levels. Swerve provides excellent baking and cooking functionality – it can even brown and caramelize!”
I discovered Swerve a couple years ago and I always have some on hand. I’ve used it for baking and also in my coffee. Since it measures cup for cup just like sugar, it’s very convenient as there are no conversions to figure out before baking.
Is Swerve Keto Friendly?
The ingredients in Swerve do not affect blood sugar, so the carbohydrates it contains are considered non-impact. Because Swerve is non-glycemic, it is the perfect sweetener to use in Ketogenic recipes.

Yes! Simply bake in an oven-safe mug or ramekin for 15-20 minutes at 350F.
1½ T. coconut flour
½ t. baking powder
1¾ T. unsweetened cocoa powder
2 T. unsalted butter
1½ T. Swerve or sweetener of choice*
2 T. heavy cream (Tip: leftover cream can be poured into an ice cube tray and frozen for later use)
¼ t. pure vanilla extract
¼ t. salt
Fresh sliced strawberries, to serve

Add the first three ingredients to a small mixing bowl and stir to combine.
Melt butter in a small bowl in a microwave for several seconds. Add Swerve and stir until completely dissolved. Taste the sweetness level and add more Swerve, if desired. Add egg, heavy cream, vanilla extract, and salt to the butter mixture and whisk to combine.
Add wet ingredients to the dry and stir until thoroughly blended. Pour blended mixture into mug or small microwave-safe container and microwave on high for 1 minute.**
Remove from microwave and serve immediately with fresh sliced strawberries, if desired. Enjoy!
*Nutritional information for recipe based on Swerve brand granulated sweetener which reports zero net carbs because the ingredients do not affect blood sugar.
**Actual cooking time will vary depending on individual unit. Check for doneness after 45 seconds. Do not overcook or the cake may become too dry.

- 2 tbsp heavy cream
- 1/4 tsp pure vanilla extract
- 1/4 tsp salt
