Lazy Enchiladas are a breeze to make! These easy layered beef enchiladas use tortilla strips -- saving you time with no stuffing and rolling!

This 30-minute recipe has all the classic Tex-Mex flavors you love - seasoned ground beef, red enchilada sauce, and salsa. All you do is layer the corn tortillas, beef mixture, and cheese, and bake it!

INGREDIENTS

– ground beef – salsa – red enchilada sauce – seasoning blend  – corn tortillas – shredded cheddar cheese (or Mexican cheese blend)

Cook the ground beef until no longer pink. Drain off the fat.

Add the salsa, enchilada sauce, water, and taco seasoning blend. Stir well. Simmer uncovered 5 minutes.

Slice 8 corn tortillas into 3 strips each.

To the casserole dish, add half the sliced corn tortillas.

Add half the meat sauce.

Add half the cheese.

Repeat layer of tortilla strips, meat sauce, and cheese then bake uncovered for 15 minutes.
