Rich and smooth with sour cream and butter to enhance Yukon Gold potatoes natural creamy texture and buttery flavor. Leave the skin on the potatoes for more hearty texture and flavor. Easy 20-minute recipe!
3lbsYukon Gold (yellow) potatoes, unpeeled, cut into 1" chunks or cubes
½teaspoongarlic powder
½teaspoonblack pepper
1teaspoonsalt
2-3sliced green onions for garnishtip - use scissors to slice the onions
Instructions
Measure out the sour cream, milk, and butter, then let them rest on the counter while you prep and cook the potatoes so they’re not cold when you mix them into the hot potatoes.
Place the potatoes in a large (5-qt) pot and cover them with 2" of water. Bring to a boil, reduce heat, and gently boil uncovered for 10 minutes, stirring occasionally, or until fork tender.
Drain the potatoes in a colander, then return the potatoes to the pot (don't rinse the potatoes).
Add the butter, milk, sour cream, garlic powder, black pepper, and ½ teaspoon of salt.
Blend on low speed with an electric hand mixer until mostly smooth but still with a few chunks of potatoes. Taste test. Add additional salt if needed. If you add more salt, blend again with the mixer just for a few seconds.
Place the mashed potatoes in a nice serving bowl, top with sliced green onions, and serve immediately.
Notes
For the Best ResultsTake the sour cream, butter, and milk out of the fridge before you start prepping the potatoes so that they won't be ice cold when you add them to the hot cooked potatoes.Wash the potatoes and dry them before you begin the recipe.Prep the potatoes by slicing them into 1-inch cubes. This will help them cook in a shorter amount of time.Always taste test before serving them to make sure the flavorings suit your taste!Substitutions/AdditionsI love this recipe as is! But if you need some ingredient swaps or want to make some additions, here are some options:
Heavy cream or half and half can be used in place of the whole milk.
Salted butter can be used instead of unsalted butter; just keep that in mind before adding more salt.
Greek yogurt or cream cheee can replace the sour cream.
Top with chives, bacon bits, or a little shredded cheddar cheese for added flavor flair!
