This ultimate, quick and easy jalapeno chicken casserole recipe has a little something extra (surprise, I threw in a veggie!). Chicken breast, sliced jalapeno peppers, sour cream, cream of chicken soup, spinach, and monterey jack cheese come together for a spicy, creamy, easy, chicken dinner tonight.

Seriously though, I was going for that “at home, on the stove” scenery. The lighting is, well, not that great but it’s what my kitchen looks like. Shadows and all. One day, we’ll update our old kitchen. This is what I call an “organic” picture, lol, but it’s for real. However, don’t let the photo fool you or discourage you from trying this recipe. Beauty is in the eye of the beholder (or tastebuds in this case).

One More Thing
One more thing you should know about this recipe. IF you have any leftovers, they will be more spicy the next day. Jalapenos get hotter the longer they sit. that’s not necessarily a bad thing, in my opinion, but I just wanted to give you a heads up! Some people don’t like surprises (unless it’s jewelry or money, right?)!
