    This ultimate, quick and easy Mexican chicken casserole has a little something extra (surprise, I threw in a veggie!). No rice or tortilla chips in my version which means this rich and creamy casserole is low carb goodness!

    Rotissirie chicken, sliced jalapeno peppers, sour cream, cream of chicken soup, spinach, and monterey jack cheese come together for a spicy, creamy, easy, chicken dinner tonight.

    Are you seeking a chicken dinner recipe that's quick and easy? You probably know by now that I love quick and easy recipes!  And this one is no exception.  Rotissirie chicken cuts down on the prep time and adds great flavor.

    The creamiest comfort food! Just close your eyes and imagine:  hot, spicy, jalapenos and chicken combined in a cheesy, creamy sauce topped with more cheese. 

    Versitile recipe! Eat it as is or serve it on top of cauliflower rice, zucchini noodles, or spaghetti squash.  The possibilities are endless so whatever floats your boat!

    What Goes In It

    This Keto Mexican Chicken Casserole is loaded with flavorful ingredients!

    Measure out all your ingredients before you begin the cooking process.

    Rotissirie chicken - using recipe-ready chicken, such as Rotissirie chicken, cuts down on prep time and adds delicious flavor. [Substitute 1 pound ground beef if you have a hankering for a Mexican ground beef casserole].

    Jalapeno peppers - add a nice flavor kick. Add more or less jalapenos to suit your taste preference. Substitute with bell peppers if you don't want any heat.

    Onions - chopped onions are optional since they tend to be higher in carbs. One cup of chopped onions will add an extra 2 net carbs per serving.

    Sour cream and cream of chicken soup - these create the amazing creaminess of the casserole. If you'd rather make your own cream of chicken soup, try this homemade cream of chicken substitute.

    Baby spinach - use fresh baby spinach for the best flavor! I love this addition to the recipe because it adds a little extra special touch. Besides, we just love spinach lol.

    Mexican cheese blend - you know, it just would not be complete without some cheese! You can substitute practically any kind of cheese; use Monterrey jack, cheddar, or colby jack if you already have that on hand.

    How to Make It

    For the best results, please follow the actual recipe card at the bottom of this post.

    Just 4 easy steps!

    (1) Saute the jalapeno (and optional onions) and spinach in a large pan.

    (2) Add the remaining ingredients. Stir well.

    (3) Pour into a 9" x 13" baking dish, top with cheese, and cook in the oven for 30 minutes.

    (4) Garnish with fresh, sliced jalapenos!

    Frequently Asked Questions

    Can you make this the day before?

    Yes, just mix everything up and store covered in the refrigerator. The next day, pour into a casserole dish and bake as directed. You may need to bake a few minutes longer since it'll be really cold.

    Can you freeze the leftovers?

    Yes, this Keto Mexican Chicken Casserole freezes well! Place the cooled leftovers in freezer-friendly containers (or ziplock bags), write the date on the container, freeze, and use within 3 months.

    How long does this last in the fridge?

    Store leftovers covered in the refrigerator. Use leftovers within 3 days. The leftovers taste better the next day!

    Expert Tips

    If you want to cook your own chicken instead of using a Rotissirie chicken, you'll need to use 4-5 medium-sized cooked chicken breasts (about 4 cups chopped or shredded chicken).

    For added flavor, add 1-2 teaspoons of chili powder (or taco seasoning) in Step 2. Serve in a bowl with a lime slice or a little salsa on top (check the nutrition label for added carbs).

    If you have any leftovers, they will be more spicy the next day.  Jalapenos get hotter the longer they sit.  That's not necessarily a bad thing, in my opinion, but I just wanted to give you a heads up!  Some people don't like surprises (unless it's jewelry or money, right?)!

    Ingredients

    • 6-8 Jalapeno peppers, fresh, diced, seeds discarded use more or less to suit your taste
    • 2 tablespoons Olive oil
    • 4 Green onions, sliced (save a few for garnish)
    • 5 ounces Baby Spinach
    • 1 Rotisserie chicken, meat removed and chopped into bite-sized pieces (discard skin and bones)
    • 2 cans Cream of chicken soup each can is 10.5 oz
    • 8 ounces Sour Cream
    • ¼ teaspoon Pepper
    • ¼ teaspoon Salt
    • 2 cups Mexican cheese blend
    Prevent your screen from going dark

    Instructions

    • In a large pan over medium heat, saute the diced jalapeno in olive oil until tender. Add the fresh spinach and saute until spinach is wilted - about 1 minute.
    • Remove pan from heat. Add the chicken, cream of chicken soups, sour cream, green onions (save some for garnish), salt, pepper, and half the cheese. Mix well. Taste for flavor and add more salt if desired. Note that the rotisserie chicken, soups, and cheese all contain sodium so be careful when adding more salt.
    • Pour all the ingredients into a 9" x 13" casserole dish and top with the remaining cheese. Bake at 350F, uncovered, for about 30 minutes, or until the cheese is melted and slightly browned around the edge. Place under the broiler for a few minutes to brown the cheese even more.
    • Garnish with jalapeno slices and/or green onion, if desired. This will be spicier the next day, and that's a good thing!
