It's the ideal side dish for Thanksgiving because it pairs wonderfully with roasted turkey, Thanksgiving Chicken, cranberry sauce, mashed potatoes, and green bean casserole.
Need another reason to love it? It's so easy! Just mix it up, pour it into your slow cooker, put the lid on, and forget about it for about 2-½ hours allowing you to enjoy a little more time with family and friends as it transforms into a perfect, creamy corn casserole. A blessing for sure!
What Does It Taste Like
Crock Pot Corn Casserole typically has a moist, slightly dense, and slightly crumbly texture, somewhat similar to a cornbread but creamier (kind of like corn pudding but firmer).
It is both sweet and savory. The sweetness comes from the corn, sugar, and the Jiffy corn muffin mix, while the savory aspect comes from the butter, sour cream, and seasonings. If all you need to know is one thing, then delicious best describes it!
Why You'll Love Corn Casserole
First, it's a real crowd-pleaser. Whether you're a seasoned cook or a novice in the kitchen, you'll appreciate how easy it comes together. It's like a warm, comforting hug on your plate, and the slow cooker does most of the work for you, leaving you more time to prep your other food items or a little quiet time before the gang arrives!
Second, while the corn casserole is cooking in the crock pot, your stove and oven are now free for other goodies such as Southern Sweet Potato Casserole or Honey Roasted Carrots and Parsnips.
What Goes In It
Here's what you'll need to create this delectable corn casserole:
Cream-Style Sweet Corn and Whole Kernel Corn - These two types of corn add different textures and sweetness levels to the dish.
Butter - Provides richness, flavor, and a savory undertone.
Jiffy Corn Muffin Mix - This little boxed muffin mix forms the base of the casserole and gives it a wonderful cornbread-like consistency.
Eggs - They help bind the casserole and add moisture. Be sure to beat them before adding them to the batter.
Sour Cream - Contributes creaminess and a hint of tang.
Sugar - Balances the flavors by enhancing the sweetness of the corn.
Vanilla Extract - Adds a subtle depth of flavor. Use the pure stuff!
Onion Powder - Provides a savory note without the need for chopping onions!
Ingredient Substitutions and Additions
- You can use frozen corn instead of the whole kernel corn; but frozen corn tends to get a little gummy; that's why I prefer the canned version for this recipe.
- For a less sweet casserole, you can omit the additional sugar in the ingredient section.
- Instead of sour cream, use Greek yogurt. You can even use cottage cheese but you must first blend it in your food processor until it's creamy (use a 1:1 ratio).
- In place of onion powder, use about ¼ cup of finely minced fresh onion.
If you want to customize your corn casserole, consider these options:
- Cheese: Add ½ to 1 cup of shredded cheddar or Monterey Jack for a cheesy twist.
- Jalapeños: For a spicy kick, mix in some diced jalapeños in the batter.
- Bacon: Cooked and crumbled bacon on top adds a smoky flavor. Add in the last 15 minutes of cooking.
How to Make Crock Pot Corn Casserole
With just a little prep work, you to set it and forget it, freeing up your time for other tasks while your delicious casserole cooks to perfection.
Step 1 - turn crockpot on high and pour in melted butter.
Step 2 - mix all of the ingredients in a bowl, and then pour the batter into the crockpot.
Step 3 - cover and cook on high for 2-½ to 3 hours. Stir before serving.
Recipe Tips for Success
- Be sure to add half the melted butter to your crock pot to prevent sticking.
- Don't overmix the batter; a few lumps are okay.
- Check for doneness by inserting a toothpick; it should come out clean when the casserole is ready.
- The cooking time in crock pots can vary depending on their size and temperature settings. Keep an eye on the casserole as it approaches the recommended cook time and adjust as needed. It's better to slightly undercook than overcook, as overcooking can lead to a dry casserole.
- Cooking a casserole in a crock pot is different than the oven! The middle might not look set but it is, so be sure to stir the casserole before serving it!

Storing and Reheating Leftovers
To store leftovers, place them in an airtight container in the refrigerator and use within 3 days. Check out this 18-piece set of glass food storage containers with locking lids from Bayco, available now on Amazon.
Leftover corn casserole can be reheated in the microwave or oven until heated through. If it's a bit dry, you can sprinkle a little water on top before reheating to add moisture.
Crock Pot Tips
Ensure your crock pot is appropriately sized for the recipe. For this corn casserole recipe, a 4 to 6-quart crock pot should work well. Using a smaller one may cause the casserole to overflow, and using a larger one may result in uneven cooking.
Crock pots can vary in cooking times depending on their make and model. Be aware that the suggested cooking time in the recipe may need adjustment based on your specific slow cooker.
Resist the urge to lift the lid frequently during cooking. Each time you lift the lid, heat escapes, and it can significantly increase the cooking time.

Recipe
Crock Pot Corn Casserole
Equipment
- crock pot (slow cooker)
- measuring cup(s)
- measuring spoons
Ingredients
- ½ cup butter, divided and melted
- 14.75 ounces can of cream style sweet corn
- 15.25 ounces can of whole kernel corn, drained
- 8.5 ounces Jiffy corn muffin mix (comes in a small box)
- 2 eggs, beaten
- 8 ounces sour cream
- ¼ cup sugar
- 1 teaspoon vanilla extract
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
Instructions
- Coat the bottom of your crock pot with ¼ cup of the melted butter.
- In a large bowl, mix together the remaining melted butter, cream corn, whole kernel corn, Jiffy corn muffin mix, eggs, sour cream, sugar, vanilla extract, onion powder, and black pepper. Tip: a whisk works well for this step.
- Pour the mixture into your crock pot/slow cooker (I use a 6-quart capacity). Do not stir but do make sure the batter is evenly spread out.
- Put the lid on and cook on high for 2-½ hours or until the edges are browned and the center is soft set. Add an additional 15 minutes if the center isn't quite set, however, it's common for the center to be a little soft. Stir the casserole before serving.
